
1 cup peanut butter
1 medium-sized potato
1 16-ounce box powdered sugar
1 teaspoon vanilla extract
Boil potato in jacket for 25 minutes. Let cool and remove jacket from potato.
Sift powdered sugar. Mash potato well and add vanilla extract and sugar a little at a time until thick like dough. Put on pastry sheet on loose powdered sugar. Knead like dough until it becomes stiff. Roll out dough and spread with peanut butter. Roll up dough (like a jelly roll) and refrigerate. Slice and serve chilled.
3/4 cup butter
2 cups sugar
3/4 cup milk
4 cups flour
2 eggs
3 teaspoons baking powder
Cinnamon
Confectioners' sugar
Cream butter and sugar.
In a large mixing bowl, alternately add flour, milk, and eggs, mixing constantly. Add baking powder and mix. Slowly add creamed butter and sugar, mixing constantly.
On greased cookie sheet, put 1 rounded teaspoon of batter for each cookie.
Preheat oven to 400°F and bake cookies for approximately 8 to 10 minutes. Cookies are done when edge of bottom of cookie is slightly browned. Cookies will fluff when baked and remain light colored on top.
Remove from oven and sprinkle with cinnamon and confectioners' sugar.
